AUs: PLEASE I love them to death
Shipping: Love it. When it comes to Buffy though I'm not interested in high-school age stuff. (not interested in that with any other characters either, to be clear). Also on the subject of Buffy, I don't think Angel is actually capable of fully getting over her and moving past their relationship so that is something to keep in mind when shipping with this dude.
Personal favourite ship: Spike/Angel
When it comes to Cordelia I do prefer her and Angel as very close best friends, but I adore her as a character so threads with a romantic slant will still be very welcome and enjoyable.
Smutting: As long as both you and the character you write are 18+ Don't have a kink list but am open to writing a lot as long as it involves consenting adults.

Hugging or kissing this character: Without some previous CR it's going to be very awkward. Actually even with the CR it's probably going to be awkward.
Flirting with this character: Yes please. He has exactly one move to offer you in return: Brooding Handsomely. If that fails, he's lost.
Fighting with this character: Sure. He's a strong, fast undead guy who fights things for a living.
Injuring this character: Not opposed to things going that way if the situation seems to call for it. Which it often does.
Killing this character: Most of the time I'll pass on this.
Using telepathy/mind reading abilities on this character: Totally fine
